Pink Lemonade Jell-O Shots

If you know anything about me, you know I love Jell-O shots.  The only person that loves Jell-O shots more than I do is our mom.  She shows up to every single party with them, usually made in a holiday-appropriate color scheme.  Until now, we always kept it simple with our Jell-O shot delivery.  I found this recipe on Bakers Royale for Lemon Wedge Jell-O shots, and I had to try it!

I added extra Gelatine so the Jell-O would not fall apart.  It makes it a lot easier when you're cutting your wedges!

Here's what you'll need:

Two lemons (At least.  I ended up using two lemons and two limes.  I still had left over Jell-O.)
1 (3 oz.) packet of Lemon Jell-O
2 packets of Knox Gelatine
1 cup water
1 cup of vodka (I used 1/2 cup Skyy and 1/2 cup Smirnoff Tuscan Lemonade)

Start by cutting your lemons in half and gutting them.  I used a knife to go around the edge, then scooped out the insides with a spoon.

Put your water over very low heat, and add the Knox Gelatine.  Stir constantly until it is completely dissolved.

Once the Gelatine is dissolved, take it off the heat, and add the Lemon Jell-O.  Again, stir constantly until completely dissolved.  Now you can add you vodka.  I also added pink food coloring.  Mine are pink lemonade Jell-O shots.  Next you want to pour the mixture into the lemon halves.  I poured mine into a measuring cup first.  The spout gives you more control.

Let the Jell-O set overnight then cut the lemons and limes into wedges.
